I decided to experiment today with a cleaned up version of Chocolate Chip Cookies. I had a few trial runs, but ended up with a yummy cookie. My family loved them. Here's the recipe:
Clean Whole Wheat Chocolate Chip Cookies
3/4 C Coconut Oil1 C + 1 1/2 Tbsp Honey
1 1/2 Tbsp Milk (non fat, rice, soy or almond)
3/4 Tbsp Vanilla
1 Egg
3 1/2 Cups Whole Wheat Flour (Finely Ground or if store bought Whole Wheat Pastry Flour)
1 tsp Sea Salt
1 tsp Baking Soda
1 C Bittersweet Choc. Chips (Or Cacao nibs if you prefer sugar free)
Preheat oven to 350 degrees. Prepare baking sheets with parchment paper.
Combine coconut oil, honey, milk & vanilla. Beat at medium speed until well blended. Beat egg into creamed mixture.
Combine flour, salt & baking soda. Mix into creamed mixture just until blended. Stir in bittersweet chips or cacao nibs.
Bake at 350 degrees for 8 - 10 min. The cookies should just be slightly browned along the edges.
